There used to be a soy sauce factory inside the Hualian sugar factory that was run by employee’s own welfare association. This factory was set up beside the big molasses groove and weighbridge station. Now, the factory is discarded, but there are still few urns that used to make soy sauce and also some fermented soybeans that was there for decades. There is an important ingredient in the process of the soy sauce production： molasses, which catalyzes the fermentation of soy beans. At the meantime, the sugar factory has extra molasses that could be used as an important material to produce soy sauce. Even though the sugar factory has stop its operation and so did the soy sauce factory, the precious memories and stories that were brought to all sugar factory employees became an important reminiscence to people whose living is related to this.
